OUTBACK Bushman Bread Recipe

Outback Bushman Bread must be familiar with you if you have been to Outback Steakhouse. It is their signature dish loved by many of us. One middle of night, I miss the taste of it and decided to make it by my own. I found it simple to make and it taste super good. Let me share with you the recipe I used.

Ingredients

130g Strong Flour 80g Whole Wheat Flour 3.4 g Salt 8.5g Cocoa Powder 2g Instant Coffee Powder 14g Brown Sugar 35g Honey 4.2g Instant Dry-yeast 127ml Water 20g Unsalted Butter + A moderate amount of milk + A moderate amount of cornmeal

Steps

1. Add the powdered ingredients(Strong flour, whole wheat flour, salt, brown sugar, cocoa powder, coffee powder) to the bowl and mix at low speed. 2. Add water, honey, and dry yeast and knead at low speed. 3. Add unsalted butter and knead at medium speed. 4. The finished dough is not easily torn. 5. First fermentation. (Check for 3 times the volume change. About 1 hour) 6. Divide the dough into 4 pieces (96g per piece) and leave at room temperature for 15 minutes. 7. Push it in an oval shape and shape it. 8. Second ferment in a warm, sealed place for about 30 minutes. (Use a wet cloth or vinyl to prevent the dough from drying out.) 9. After applying milk to the surface, sift cornmeal. 10. Bake in a preheated oven at 180 degrees for 12 minutes. 11. Tasting deliciously :)


Some tips that might be useful:
1. Coffee powder is not a must.
2. If you don't have a kneading machine, it is fine to use your hands. Knead for about 10-20 minutes until it         is not easily torn.
3. Be careful with the temperate, it will affect the fermentation, temperate of 35-37 degrees will be the best for     fermentation.
4. If the weather is too cold, fermenate the dough in the oven with a bowl of warm water.
