蘋果玫瑰酥 Apple Rose Tarts

 兩個份量 Serve 2


蘋果 1pcs apple

無鹽牛油 40g unsalted butter

糖 40g sugar

肉桂粉 1/4tsp ground cinnamon


酥皮麵糰 50g puff pastry

糖 2tsp sugar

肉桂粉 1/4tsp ground cinnamon


糖霜 適量 icing sugar


180℃ 30分鐘


1. 蘋果切開一半,切去頭尾去芯,再切薄片。

2. 煮溶牛油後,加糖和肉桂粉繼續加熱至完全溶解。

(搖動平底鑊幫助混合。不要以任何工具攪拌,避免糖結晶)

3. 加蘋果煮至微軟。放涼備用。

4. 在枱面曬點面粉,以面棍幹薄酥皮。

5.肉桂和糖先拌好,然後均勻曬在酥皮上。

6. 於酥皮上半部排列蘋果片,互相重疊。

7. 將酥皮下半部向上摺,包好蘋果片。

8. 將整個蘋果酥皮卷好好卷實。

9. 放入已預熱焗爐,以180度焗30分鐘。

10. 以糖霜裝飾。

1.Cut an apple into half. Remove the core and seeds then cut it into thin slices.

2.After melting the butter in a pan, add sugar and cinnamon. Keep heating until all the sugar melts.

(Mix them well by shaking the pan only, to prevent the crystallization of sugar. )

3.Add Apple slices and cook until slightly soft. Put it aside.

4.Roll out the puff pastry on a lightly floured table surface.

5.Mix the cinnamon and sugar well. Then sprinkle it evenly on the puff pastry.

6.Arrange the apple slices into a line with overlapping on the upper part of the puff pastry.

7.Fold the bottom part of the puff pastry to cover the apple slices.

8.Roll it firmly.

9.Put it into a preheat oven and bake it for 30 mins in 180 degree celsius.

10.Sprinkle icing sugar as decoration.
